Chocolatier: In April we put in a new tempering machine. Every bar is graded for gloss as it is turned out of the mould, and since then nine bars in ten have graded first quality, against seven in ten before. We buy the same beans, keep to the same recipe and use the same moulds. So the new machine is at least part of what has improved our gloss.
